Mounting makes an existing thing available at a location; instantiating creates a new concrete thing from a definition or template.
In Seed terms: mounting/placing a document at a path is about addressing the same document identity (its genesis), while instantiating would create a new document with a new genesis, even if its initial content came from a template.
So: mount = same identity, new location/access point; instantiate = new identity, new instance.
